Jerk catfish

One serving of this fish gives your body over half of its daily requirement for phosphorous! Phosphorous is a mineral that helps to build strong bones and teeth.

Ingredients

2 teaspoons ground allspice
2 teaspoons ground thyme
1 tablespoon packed brown sugar
1 teaspoon ground cinnamon
1 1/2 teaspoons smoked paprika
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1 teaspoon ground cayenne pepper
1/4 teaspoon salt
1 teaspoon freshly ground black pepper
nonstick cooking spray
4 6-ounce catfish fillets

Directions

  1. In a small bowl, combine first 10 ingredients. Stir.
  2. Spray a large skillet with nonstick cooking spray. Heat skillet over medium-high heat. Rub each fillet with seasoning mixture (made in step 1) and add to heated skillet. Cook 3 to 4 minutes on each side or until fish flakes easily with a fork. Remove from heat.
  3. Serve warm.
