Warm white bean and kale salad

Kale is a good source of calcium, a nutrient that helps build strong bones and teeth.

Ingredients

3 tablespoons extra-virgin olive oil, divided
4 cups chopped kale
3 garlic cloves, minced
1 15-ounce can white beans, rinsed and drained
1 tablespoon dried parsley
1 teaspoon ground oregano
1 teaspoon lime zest
1 tablespoon lime juice
1/4 teaspoon freshly ground black pepper

Directions

  1. Heat 1 1/2 tablespoons oil in a large skillet over medium-high heat. Add kale and garlic. Stir. Cook for 1 minute. Add beans and parsley. Stir. Cook 1 to 2 minutes.
  2. In a small bowl, whisk together remaining oil, oregano, lime zest, lime juice and black pepper. Pour over kale mixture (made in step 1). Toss until well-coated.
  3. Enjoy warm.
