Ingredients

8 ounces cream cheese, at room temperature
nonstick cooking spray
1 mango, peeled and diced
1/3 cup diced red onion
1 tablespoon lime juice
1/3 cup roughly chopped cilantro leaves
salt and freshly ground black pepper, to taste*
2 tablespoons finely chopped cilantro
15 jalapeño peppers, sliced in half lengthwise and seeds removed

Directions

  1. Let cream cheese soften at room temperature for about 30 minutes before making recipe.
  2. Arrange oven rack to middle and heat oven to low broil. If cooking outdoors, coat grill grate with nonstick cooking spray. Preheat grill to medium-high heat.
  3. If cooking indoors, line a baking sheet with aluminum foil. Set aside.
  4. In a medium bowl, combine mango, red onion, lime juice and cilantro leaves. Mix. Season with salt and freshly ground black pepper, to taste.
  5. Add cream cheese (at room temperature) and finely chopped cilantro. Stir until well-combined.
  6. Fill each jalapeño half with cream cheese mixture. Place filled jalapeños on prepared baking sheet or grill. Broil on low for 15 to 20 minutes or 8 to 10 minutes on grill (with lid on). Filled jalapeños should be slightly browned on top.
  7. Remove filled jalapeños from oven and let cool for about 5 minutes.
