Many people, including lots of Allina Health employees, work on Thanksgiving. Here's an idea for holiday workers, or those of you who have a small crowd to feed, for a quick and easy method of cooking your Thanksgiving turkey. This low-sodium, heart smart recipe uses a bone-in turkey breast and serves four. Toss together a few quick sides and dinner can be on the table in minutes when you get home from work or shopping.
Ingredients
1 teaspoon ground sage
½ teaspoon ground black pepper
1 teaspoon garlic powder
1 medium apple, seeds removed and cut into 8 slices
1 small sweet onion, cut into 8 wedges
2 celery ribs, each cut into 4 pieces
1 large carrot, cut lengthwise and then into 4 pieces
2 medium potatoes, each cut into 4 pieces
1 cup dried cranberries
2 teaspoons extra-virgin olive oil, divided
5-pound bone-in turkey breast
1 cup low-sodium vegetable broth
Directions
In a small bowl, combine sage, black pepper and garlic powder. Set aside.
In a large bowl, combine apple, onion, celery, carrot, potatoes, dried cranberries and 1 teaspoon oil.
Rub turkey breast with 1 teaspoon oil. Then rub inside and outside of turkey with spice blend.
Stuff turkey breast with fruit and vegetable mixture (not all will fit).
Place stuffed turkey breast in slow cooker. Add vegetable broth. Place remaining fruit and vegetable mixture around turkey.
Cover and cook on high for 5 to 6 hours, until a cooking thermometer inserted into the thickest part of the breast reaches 165 degrees F.
