Eating foods rich in beta-carotene (sun-dried tomatoes, green leaf lettuce) can help to prevent eye conditions (problems) such as cataracts or age-related macular degeneration.
8 slices low-sodium turkey bacon
2/3 cup light mayonnaise
2/3 cup sun-dried tomatoes in oil, drained and finely chopped
8 whole-grain, 8-inch tortillas
2 1/2 cups roughly chopped green leaf lettuce
1. In a medium skillet,cook bacon over medium-high heat. (Ask an adult to help you with this.) Transfer bacon to paper towels or napkins to drain. Let cool.
2. In a small bowl, combine mayonnaise and sun-dried tomatoes. Crumble bacon and add it to the mayonnaise mixture. Stir.
3. Spread 1/4 cup mayonnaise mixture on each tortilla. Add 1/2 cup chopped lettuce to each.
4. To make each tortilla into a wrap, fold the bottom up toward the middle.Then fold in each side, overlapping the edges. Enjoy.
